Lemon Blueberry Chia Pudding

I guess, at this point, chia pudding is “like so last week”. I know that it has been current food trend for a while now, but I am just now getting around to trying it. I am a big tapioca pudding fan. The texture makes tapioca pudding fun to eat in my opinion. Chia pudding is a similar texture. This pudding is also a much healthier option. I think this can serve as a dessert or a breakfast. This recipe is intended for breakfast, but you could certainly put your own twist on it to make it more of a dessert option. Sweet, creamy, and floral, this recipe is sure to spark chemistry with your taste buds. 

Ingredients:

1 cup milk of choice

1/3 cup chia seeds

1 tsp. vanilla extract

1 tsp. lemon zest

Blueberries and favorite granola/cereal for topping

Whisk milk, chia seeds, vanilla extract, and lemon zest in a bowl until thoroughly combined. Divide mixture into two small serving bowls or one large individual serving bowl. Cover and chill in the fridge for at least two hours. The longer the pudding sits, the thicker it will become. Top with fresh blueberries and your favorite granola or cereal for some added crunch!
