Hi, my name is Lauren Gibbs. As many of you may know- I love food and every aspect of food. I received my bachelors degree from the University of Wyoming in Dietetics, and I am currently working as a health coach full time. I am also working toward obtaining my registered dietitian credentials. In my free time I cook. I create dishes that are original to me and try to bring new, fresh flavors to old favorites. I have tried to achieve a balance between my extreme passion for nutrition/health and my desire to make dishes that are delicious and comforting.

I learned my love of cooking from my mom; I owe a lot of what I know to her and my grandma. When I began my studies of nutrition, however, that is when the flame of passion really seemed to ignite. I not only enjoyed eating, but I also began to have respect for what I was eating. I started to see food as more than just a flavor for human consumption, but also, as an entity all its own with individual characteristics. When this shift in my thinking about food happened, a shift in my self-respect happened as well. I realized that being mindful of what I put in my body made me feel like I was worth so much more. I could go on and on about myself and my feelings, but that isn’t what this blog is meant for. This blog is meant to inspire you in the kitchen. This blog is meant to encourage some of the same shifts in thinking that I have experienced myself.

For me, cooking has allowed me to find my place. I feel that when I cook I offer talents that I couldn’t find a channel for in the past. Making food for other people brings me true joy. Creating dishes allows me artistic expression. Smells that are created in the kitchen have an ability to draw out memories of family and home. In addition to the happiness food can bring, it can also bring healing. Fresh, wholesome ingredients have health benefits that truly amaze me- encompassing everything from disease prevention to general wellness.

In this blog you will hopefully find some content that other food blogs aren’t offering. I want to offer you more than recipes. I want to give you information and ideas that can hopefully spark your own inspiration. My hope is that this will be an outlet for learning. Please go on this journey with me with an open mind and an interested spirit. Thank you for reading and for supporting me in my dream to share my table. As Cesar Chavez said, “If you really want to make a friend, go to someone’s house and eat with him… the people who give you their food give you their heart”- that really is my goal here- to give you my heart.
